Kangkong Masak Halba

Kangkong or water spinach is your no. 1 favourite as far as vegetables are concern, isnt it? You would still asked for Kangkong Belacan every time we dine out even though we've just had it the day before. That's how much you love kangkong. You just cant get tired of it, right?

This Kangkong Masak Halba is a recipe inherited from my mum. I love kangkong cooked this way. Not only it's easy to cook, the taste is splendid too. The sweet potato add the sweetness to the soup along with the fenugreek-y taste. Simply awesome.

Ingredients

A handful of kangkong
1/2 onion, finely sliced
1 red chilli, julienne
1/4 cup of anchovies, pounded
1 pc of sweet potato, cut into desired shape
1/2 tbsp fenugreek
1 bowl of water
Salt to taste


How To

Heat the oil & fry the onion & chilli till fragrant. Add in the anchovies & fry for a while.

Pour in water & put in the sweet potato. Cook till the potato is soft.

Then, add the kangkong & fenugreek followed by salt to your taste.

Dish out & serve hot with rice.

Fried Chives Flower w/Fish Cake



I'm very sorry if I've disappoint some of my fellow readers by posting today's entry late evening like this. It is now 10.30 pm when I just started writing this entry......huhuhu. Thought of ditching out for the day but then the guilt is too strong that I couldnt do it. I've committed myself to this blog therefore it is my responsible to meet the needs of my readers in any way I possibly could.

I've been terribly busy the whole day today with the office works among my many other commitments that I just couldnt squeeze myself into writing this entry earlier. Tomorrow is a very special day for me where all of my hard work & effort for the past 1 month will finally materialized, insyallah. I cant wait to announce it here & share the good news with all of you.

Anyway, that's tomorrow's story. As for today, I'm gonna post a new recipe of mine which debuted last night as my dinner. I dunno whether you've heard of kuchai flowers ( or chives flowers in english ) before. For those who didnt know, kuchai flowers are a long green leaves with white flower bulbs at the end. Without the flowers, they look pretty similar to spring onions.

I was in the supermarket yesterday when I saw these leaves. Not that I've never seen it before but out of blue yesterday, I felt like trying out this particular vege. Honestly, I've never ever tasted it......let alone cooking a dish out of it. In a way, I'm sort of giving myself a challenge on chives flowers cooking. After getting all the appropriate ingredients to go along with it, I headed home feeling very anxious & excited.

As expected ( chewahhhh ), I pass with flying colours. It turned out to be a very tasty & healthy dish, both Marsya & myself enjoyed very much. Well, how difficult can it be for a stir fried vegetables, isnt it? You just need a lil' bit of creativity to make it a perfect dish.

So, this is what I did with chives flowers :


Ingredients
1 medium stalk of chives flowers
10 pcs of fresh sweet peas
10 medium sized prawns, shelled
1 packet of Enoki mushrooms
2 sticks of fish cake, sliced
3 garlics, crushed
5 pcs of bird-eyed chillies
1 medium sized onion, wedged
Salt to taste


How To
- Fry the garlic, onion & chillies till fragrant
- Add in the prawns & the sliced fish cakes. Fry for 1 min.
- Add the sweet peas & fry till soften. Do not over-cooked.
- Finally, toss in the chives & mushrooms.
- Add salt to taste.
- Dish out & serve when it's still hot.

Sambal Goreng Jawa




Ada kelainan skit pada menu pagi raya tahun ni. Menu wajib kita org untuk raya pertama biasalah - ketupat, rendang campur ( daging + hati + paru + limpa ) & kuah kacang. Tahun ni tekak akak gatei la pulak terasa nak makan something different konon. So ini lah hasilnya : sambal goreng jawa.

Resepi ni akak dah modified dari banyak2 resepi yg akak google kat tenet - improvised in accordance to my taste la. Cili api dah tentu extra punya....baru lah ada ummphhh !!


Bahan-Bahan

1/2 kg paru, direbus dgn garam hingga lembut
1/2 kg udang, digoreng sebentar
2 keping tempe, dipotong kecil & digoreng
2 keping tauhu, dipotong kecil & digoreng
2 biji kentang, dipotong kecil & digoreng
10 urat kcg panjang, dipotong serong
2 biji bwg besar, di mayang
5 biji bwg putih, dimayang
Secekak suhun, dikerat2 & direndam
3 camb cili kisar
2 btg serai, dititik
1/2 in lengkuas, dititik
15 biji cili api, dibelah 2
1 cawan santan
1 inci belacan, diramas dgn air asam jawa
Garam & gula secukup rasa


Cara-Caranya

- Tumis cili kisar, lengkuas & serai hingga garing.
- Masukkan bwg besar, bwg putih & cili api
- Masukkan kcg panjang & goreng hingga separuh masak.
- Masukkan air asam & belacan, garam & gula.
- Masukkan paru, udang, tempe, tauhu & suhun - kacau rata.
- Masukkan santan & sedikit air jika perlu.
- Goreng hingga kering.
- Angkat apabila kcg pjg sudah empuk.


Nota : Boleh juga ditambah dgn petai yg dihiris halus, jika suka.

Padprik


Ain & Ija.....this is for you guys......buat jangan tak buat !


Ingredients
300 gm ayam / udang / sotong
4 btg kacang panjang, dikerat2 about 3 cm long
1 small sized carrot, di hiris2
Cauliflower, cut into small pieces
2 tbsp chilli paste
3 garlics, crushed
1 big onion, wedged
1 lemon grass, crushed
2 - 3 kaffir leaves, koyak2 kan
4 - 5 cili padi, crushed


For The Sauce
3 tbsp oyster sauce }
3 tbsp chilli sauce } mix all sauces with
3 tbsp tomato sauce } 1/2 cup of water
2 tbsp soya sauce }


How To
- Fry the garlics till fragrant.
- Add in chilli paste & fry till it's well cooked
- Then put in the chicken, onion, lemon grass, cili padi & the lime leaves
- Put in the sauces mixture & stir for a while.
- Add the vegetables. Do not add anymore salt / sugar
- Wait till the vegetables are cooked.
- Add water if needed.
- Serve & enjoy.

Mango Salad

Prepared this for lunch today – even though I didnt have the complete ingredients for it. Since I didnt have that many entries these couple of weeks, I’m gonna post the recipe for this special dish here :

Mango Salad


· 1 medium-sized green unripe mango, shredded
· 3 shallots, finely sliced
· 10 bird’s eye chilies, finely sliced
· 10 gm dried prawns / udang geragau, fried
· 4 tbsp lime juice or to taste
· 1½ tbsp sugar or to taste

. 2 tbsp nampla (fish sauce)


Combine all salad ingredients together with the sauce in a mixing bowl. Toss well to mix.

Japanese Beancurd

Yesterday, while browsing Mat Gebu's Blog, I came across this tofu recipe called Japanese Beancurd. Looking at the picture alone makes me salivating already. Anyway, all the pictures in that blog looks great. It's just a photo of food but the way it has been photographed really makes it beautiful & classy. Cik Mat really put an effort in making each photo looks so nice & lovely, like the plates used for the food for instant. They are all authentic Baba & Nyonya's type which makes the whole picture looks so awesome. Go ahead & check out his blog.....you'll be amazed.

Ok, back to my tofu story. As it is, Japanese tofu has always been my favourite. On top of that, I'm fasting. So, the moment I saw that mouth watering picture, I knew that I just had to have this for my buka puasa today. It is too tempting to resist.

So, this is it...............my very own Japanese Beancurd. Thanks to Mat Gebu for the wonderful recipe. The taste is superb! Absolutely marvelous !

For those who would like to try out this recipe, I've paste it here......sorry, too lazy to translate it to English (macam lah ada Mat Salleh nak baca blog ni....ahaks! ). It's worth a try....trust me.



Bahan-Bahannya
2 tiub tofu Jepun
1 biji bwg besar, potong baji
2 ulas bwg putih, cincang halus
8 - 10 cendawan butang, hiris
1 biji capsicum merah, didadu
15 tangkai snow peas
2 pokok daun bwg, hiris kasar

Bahan Sos
4 camb sos tiram
1 camb kicap cair
1/2 camca besar minyak bijan
1 camca besar sos lada hitam
1 camca teh lada sulah1 camca teh gula
1/2 cawan air
Sedikit bancuhan tepung jagung

Cara-Caranya

Tofu dipotong bulat & digoreng hingga kuning keemasan

Panaskan sedikit minyak dalam kuali, tumis bawang besar dan bawang putih hingga wangi. Masukkan cendawan, capsicum dan snow peas. Kacau rata.

Masukkan bahan sos dan gaul hingga rata. Pekatkan kuah dengan bancuhan tepung jagung. Kepekatan bergantung pada kehendak masing-masing.

Susun tofu yang telah digoreng tadi dlm pinggan, tuang kuah bersama sayur2ran tadi atas tofu, ratakan.

Tabur hirisan daun bawang dan hidangkan panas...
