Nasi Ulam

Marsya, you are really one of a kind, dear. While other kids ( adults too ) despise vegetables, you on the other hand cant eat without one. And on top of that, you love all those ulams too where you could actually it them raw. That's what we called "mummy's gal" !

Since you love those ulams, nasi kerabu has been one of your favourite dish. But that's not what I'm cooking today (since I dont know how to make nasi kerabu.....hehehe). Today's special dish would be something similar to Nasi Kerabu where lots of ulams are involved. It's called Nasi Ulam - one complete, balanced dish where all important nutrients like carbohydrate, protein, minerals & fiber (minus the fats) are all in. And most importantly, the taste is as good too !

Nasi Ulam

Ingredients

3 cups cooked rice
2 stalks daun kesum
1 pc daun kunyit
1 handful of pegaga
2 - 3 stalks ulam raja
2 - 3 stalks daun selom
1 kembong fish, grilled & shred
1/2 cup anchovies
1 cup fresh coconut flakes
1 - 2 tbsp black pepper
2 red onions
Salt to taste




How To

1. Chop finely all the leaves & put aside.

2. Fry the anchovies (without oil) till crunchy & pound them.

3. Fry the coconut flakes (without oil) under medium heat, till golden brown.

4. Pound the black pepper with onions till fine & put aside.

5. Grill the fish, debone & shred to small pieces.

6. Mix all ingredients with the rice & add salt to taste.

7. Optionally, you can add some anchovies' sauce (budu) which has been mixed with lime juice & some bird's eye chillies.

Fried Mee Lidi

My Dear Marsya,

As far as I know, Kuay Tiaw is your number one favourite noodles and Mi Lidi comes next, while bee hoon is a no-no. And speaking of that, when was the last time I fried bee hoon at home ? Must have been ages, I supposed. Hehehe...no worries dear - I can always get it elsewhere if I feel like having it.



FYI, this is how your Mi Lidi looks like. And bear in mind that you can only get it in Kuantan. Dont ask me why but that's the fact - they are just not sold in KL. I've checked every shops, markets, hypermarkets & supermarkets in KL but none of them has it here. If you noticed, every time we went back to Kuantan, I always took the opportunity to stock up these noodles. I bought like 10 packets of them - one shot.

One thing with this Mi Lidi is that, it is best fried with dried prawns. You can still use the fresh ones though but personally, I preferred the dried prawns better.

Fried Mee Lidi

Ingredients

1/2 packet of Mi Lidi
3 shallots, pounded
6 garlic, pounded
1 - 2 tbsp chilli paste
1 large eggs
1/2 cup of dried prawns, soaked & pounded
2 cups of shredded cabbage
A handful of chives, cut into 1 cm length
1 tbsp chicken stock granules
1 tbsp oyster sauce
1 tbsp dark soya sauce
1 tsp salt (or to taste)




How To

Boil water, add the noodles & simmer till the noodles are cooked.

Remove from the fire & drain out all the water. Run cold water through it to discharge excess starch.

Beat the egg lightly & make a scramble out of it. Set aside.

Heat oil & fry the onions & garlic till fragrant. Add in the chilli paste & stir well till the chilli is completely cooked & the colour turned into a darker shade.

Then add the dried prawns & stir for another minute. Put in the oyster, dark soya sauce, salt & a bit of sugar.

Finally, add the scrambled egg, cabbage & chives, along with the boiled noodles. Mix well.

Dish out once the vegetables are cooked. Ready to serve.

Nasi Impit Goreng

Nasi Impit Goreng

Time-time raya ni, mesti banyak nasi impit atau ketupat kat umah. What can you do with the nasi impit when there are no more rendang left? Today, I’m gonna share a very simple recipe on what to do with the remaining nasi impit. It is called Nasi Impit Goreng – simple yet nice !

Ingredients

1 bowl of nasi impit

4 shallots } blend

3 garlics } together

3 tbsp chilli paste }

1 tbsp oyster sauce

10 – 12 medium sized prawns

7 – 8 bird’s eye chillies (optional)

2 eggs

A handful of kuchai leaves, cut into 2 cm length

Salt to taste

How To

Scramble the eggs until cooked through. Put aside.

Cut the nasi impit into very small cubes – do not cut them too big of a cube.

Fry the chilli & onions mixture till fragrant. Add bird’s eye chilies if you like it to be hot & spicy. Add also the oyster sauce.


image Add in the prawns & salt. Fry for a while till the prawns are almost cooked.


image Put in the nasi impit , eggs & kuchai leaves. Toss briefly until cooked through. Add soya sauce if desired.

Wanton Mee With Dried Chicken Curry



Kali ni kita buat chinese food pulak yer. Had this dish a few weeks ago & loved it so much. By the look & taste of it, it shouldnt be that difficult to prepare. All you need is wantan mee, vege & chicken curry.


Wanton Mee With Dried Chicken Curry


Wanton Mee
Chicken, cut into small pieces
2 tbsp chicken curry powder
3 garlics, finely pounded
4 shallot, finely pounded
2 tbsp chillie paste
Thick coconut milk
Fish balls
Curry leaves
Sawi



How To

- Scald noodles in hot water for 30 seconds, then rinse in cold water.

- Strain noodles in colander.

- Mix the shallots, garlic, chillie paste & curry powder together.

- Fry the curry paste till fragrant, then add in the chicken.

- Put in the coconut milk & wait till it simmer. Add the fish balls

- The curry has to be thick - dont add too much water to it.

- Boil the sawi till it soften.

- Serve the wanton noodles with the curry & sawi.

Mee Calong


It's been a while since the last time I've posted a recipe here, isnt it. It's not that my dapor tak berasap but then there are other more interesting stories to share rather than my boring recipes. Anyway, today I'm gonna share the recipe for one of the special dish which can only be found in the East Coast........Mee Calong.

Sedap weiii mee ni.....sebab byk ikan...akak kan kucing siam - love fish very, very much. That's how an east coasters are - we love fish so much.....semua menda kita org nak letak ikan. Karipap inti ikan.....pulut panggang inti ikan.....bubur lambok letak ikan.....pendek kata kalau kek tu boleh letak ikan pun, kita org buat jugak.....wakawaka.



Mee Calong


Bahan2 nya
4 ekor ikan kembung, diambil isinya saja & dikisar halus
1 camb tepung jagung
Garam & lada sulah sesedap rasa

- Bahan2 di atas dicampurkan together-gether
- Then di bulat2kan cam fishball ( memang fishball punnnnn )


Bahan2 Lain
Mihun - dicelur
1 camb lada hitam }
4 biji bawang merah } ditumbuk halus
1 biji bawang putih }
1 inci halia, dititik
3-4 pokok sawi minyak*
2 keping dada ayam


Cara2 Pembuatannya
- Dada ayam direbus dengan api kecil hingga masak - simpan rebusan ayam
- Carik2 isi ayam tu - cam nak buat soto tu la.
- Tumis lada hitam (yg telah ditumbuk dgn bwg merah & bwg putih) dgn halia smpai naik bau
- Masukkan air rebusan ayam tadi. Tambah air biasa kalau tak cukup.
- Setelah menggelegak, masukkan fishball tadi.
- Bila fishball tu dah timbul, kira dah masak la tu (cam buat buah melaka la pulak yer)
- Then masukkan sawi, masak hingga sawi layu.
- That's it ! Easy peasy.....
- Nak makan kalu.....letak mihun, letak isi ayam tadi & letak kuah.
- Kalau nak pedas, buat sambal kicap ( resepi carik sendiri arrrr....)


* Sawi ni ada 2 jenis (atau "2 bangsa" kalau ikut cakap org Pahang....hidup Pahanggggg). Jenis yg pertama tu daunnya lebar sikit & it's cheaper. The other type, their leaves are greener & smaller - a bit more expensive than the first one but it certainly tastes better - much better actually. Kedai2 makan selalunya guna yg murah tu la....ye lah, nak untung lebeyyy kan.

Ok, guys. Hope you'll like this recipe as much as I do. One thing about this noodle - never use the pre-prepared fishballs. It wont be the same & you cant call it Mee Calong anymore ! Jangan ngelat......nanti daulat !!!
