Double Chocolate Muffin

So, this is the baking project that I mentioned in my last posting. I've actually wanted to bake the Kenny Roger's muffin since I've just found the recipe from the net a few days ago. To my disappointment, I've ran out of baking powder. Damn!

Since I've already set my mind to bake a muffin tonite, I still have to do it. Otherwise I would be surrounded with this unpleasant feelings around me......and I dont think i would like to be in that situation. So, I flip through my "kitab" to look for a recipe which does not require any baking powder. That's how I end up with this Double Chocolate Muffins. It's a very easy recipe with a normal kindof ingredients. The method is even more easier. You just have to dumb everything in & mix them well......oh yeah, it is THAT easy.

So, to those who would like to try out this recipe (which I highly recommend), here you are :


Ingredients

9 oz self raising flour
1 tsp bicarbonate of soda
1/2 tsp salt
5 tbsp cocoa powder
4 oz chocolate chips
5 oz brown sugar
260 ml full cream milk
90 ml vegetable oil (I've used corn oil instead)
1 tsp vanilla essence
1 egg



How To

Preheat oven @ 160 deg. C

Sift flour, bicaronate of soda & cocoa into a bowl. Add chocolate chips, salt and sugar.

Add in milk, oil, vanilla & egg to the dry ingredients.

Mix the ingredients but dont over beat as it will make the muffins heavy.

Bake for 10 mins. This will make about 45 pcs of mini muffins.

Crab & Tanghoon Soup

Feel like eating something soupy for dinner but I cant afford to spend extra hours in the kitchen as I have a baking project awaiting for me tonight. As such, I opt for an instant soup which would definately saves a lot of my time. After checking all the options there in the supermarket....I mean, options for instant soups, I end up with this : Maggi Crab & Tanghoon Soup.





To make it more interesting & not so plain, I've added the Sweet Peas & Japanese Tofu. It turned out to be quite okay actually. Not bad for an instant food....not bad at all. Me & Marsya did enjoyed the soup very much.

Seafood Tomyam Spaghetti

This morning for breakfast, I've decided to do Marsya a favour by cooking her favourite dish.....spaghetti. She just loves spaghetti. This time I'm trying to be a little bit more creative by cooking a different spaghetti sauce - rather than the same old Bolognaise.

I bought this Tomyam Spaghetti sauce a few weeks ago but havent actually tried it out yet. I love tomyam so much. So, I guess I must have like this sauce too. Ok then....let's start cooking !


Ingredients
1 can of Prego Tomyam sauce
8 - 10 prawns, shelled
4 medium sized squids, cut
1 Bombay onion, diced
3 garlics, crushed
2 tomatoes, diced
8 - 10 cili padi, slightly pounded
6 button mushrooms, sliced
5 - 6 kaffir lime leaves, shredded


How To

First, heat oil in pan and fry the onion & garlic till fragrant.

Then add in the cili padi. & continue frying till the chillies are soften.

.
Now, add the mushrooms & tomatoes. Fry for a 1 more minute.



Add in the prawns & squids & fry for a while. Dont overcook.




Then, put in the sauce & lime leaves. Add a bit of water if the sauce is too thick.




Finally, add salt & sugar to taste. Wallah ! There goes your Seafood Tomyam Spaghetti.......looks very tempting kan?






p/s The sauce taste really good - very fusion. A mixture of the east & west. Highly recommended !

Greenlace Cookies

Somewhere last week, Ain came over for beraya. She brought along her little hero Aidan @ Aidang. He's so cute in that tiny Baju Melayu of his. Apparently Aidan really loved this one cookies.....Greenlace Cookies.

He kept on eating it....piece after piece, which according to Ain, not his normal appetite . He really enjoyed eating those cookies & that that definately makes me happy. I even tapau some for him to bring back home since he really loved it. Ain told me later that he finished them all that very night itself! Cool.......

So Ain, a piece of advice to you dear. Since Aidang loves this cookies very much, why not make him a happier kid by baking some for him. I'm sure he'll be very delighted to see his favourite green cookies in the jar at his very own home......dont you think so? :)

As a favour to my dear fren Ain, I'm gonna post the recipe here for her. Happy Baking!!

Ingredients A
120 gm butter
20 gm shortening

80 gm castor sugar

Ingredients B
180 gm flour
30 gm Hon Kwee flour
1/4 tsp baking powder
30 gm Marie bicuits, blend finely
20 gm blended hazelnuts
Green colouring
White chocolate
Coloured rice

How To

Mix well ingredients A. Combine thoroughly with ingredients B until you get a soft dough.

Roll out the dough & cut into your desired shapes. Bake in the oven @ 180 Deg. C for approximately 15 minutes .

Cool on a wire rack. Decorate biscuits with white chocolate & coloured rice.

Japanese Beancurd

Yesterday, while browsing Mat Gebu's Blog, I came across this tofu recipe called Japanese Beancurd. Looking at the picture alone makes me salivating already. Anyway, all the pictures in that blog looks great. It's just a photo of food but the way it has been photographed really makes it beautiful & classy. Cik Mat really put an effort in making each photo looks so nice & lovely, like the plates used for the food for instant. They are all authentic Baba & Nyonya's type which makes the whole picture looks so awesome. Go ahead & check out his blog.....you'll be amazed.

Ok, back to my tofu story. As it is, Japanese tofu has always been my favourite. On top of that, I'm fasting. So, the moment I saw that mouth watering picture, I knew that I just had to have this for my buka puasa today. It is too tempting to resist.

So, this is it...............my very own Japanese Beancurd. Thanks to Mat Gebu for the wonderful recipe. The taste is superb! Absolutely marvelous !

For those who would like to try out this recipe, I've paste it here......sorry, too lazy to translate it to English (macam lah ada Mat Salleh nak baca blog ni....ahaks! ). It's worth a try....trust me.



Bahan-Bahannya
2 tiub tofu Jepun
1 biji bwg besar, potong baji
2 ulas bwg putih, cincang halus
8 - 10 cendawan butang, hiris
1 biji capsicum merah, didadu
15 tangkai snow peas
2 pokok daun bwg, hiris kasar

Bahan Sos
4 camb sos tiram
1 camb kicap cair
1/2 camca besar minyak bijan
1 camca besar sos lada hitam
1 camca teh lada sulah1 camca teh gula
1/2 cawan air
Sedikit bancuhan tepung jagung

Cara-Caranya

Tofu dipotong bulat & digoreng hingga kuning keemasan

Panaskan sedikit minyak dalam kuali, tumis bawang besar dan bawang putih hingga wangi. Masukkan cendawan, capsicum dan snow peas. Kacau rata.

Masukkan bahan sos dan gaul hingga rata. Pekatkan kuah dengan bancuhan tepung jagung. Kepekatan bergantung pada kehendak masing-masing.

Susun tofu yang telah digoreng tadi dlm pinggan, tuang kuah bersama sayur2ran tadi atas tofu, ratakan.

Tabur hirisan daun bawang dan hidangkan panas...
